Dolcetto is the flagship grape of Piemonte because the beguiling sweetness of its fruit is perfectly balanced by its ripe tannins, which make for a magical food wine that just comes alive at the table and brings everything else along with it. For the love of tradition and terroir, Aldo Vaira made the unusual choice to preserve very old Dolcetto vines planted in DOCG Barolo vineyards of Coste & Fossati vineyards high above the town of Barolo. Highly unusual indeed because had he torn up the 100 year old vines and planted Nebbiolo, the vineyard would bring in much more money. Instead, he left the gnarled vines to produce one of the finest Dolcetto available. Extremely low-yielding, approximately one bottle of wine is produced per vine.
