VINS EL CEP - Gelida Brut Gran Reserva 2016 - $22

The estate's best vineyard of each variety have been selected for this wine. Macabeo from Can Simón, Xarel-lo and Pinot Noir from Can Prats, Parellada from Can Castany and Chardonnay from Can Miquel de les Planes, in Gelida. Vins el Cep is a unique producer of sparkling wine from Spain because all of their vineyards are certified organic and are estate owned. This was the first producer in Spain to employ biodynamic practices at their estate. Methode champenoise.

PARÉS BALTÀ BLANCA CUSINÉ - Gran Reserva 2012 - $40

The ‘White Queen’. In Blanca Cusiné, the traditional variety Xarel·lo is joined with the two historic grape varieties in sparkling wine, Chardonnay and Pinot noir. Every one of them under the influence of the climate and the soil in the high mountains of Penedes. The Pinot Noir in this cava is vinified like a Blanc de noir to offer an elegant and refined sparkling wine.

*Vins Família Ferrer Can Sala 2008 - $N/A

Can Sala Brut Nature 2008 is produced in the historic winery of the Ferrer family, the originators of the Freixenet brand, which is the world leader in Cava today both in quantity and quality. It is a Gran Reserva which ages for almost 12 years on lees and it is made from meticulously selected Parellada and Xarel.lo grapes from Casa Sala, the family estate at Sant Quintí de Mediona. The grapes are hand picked and pressed in the Bodega’s original wooden press, which is over 125 years old.
